CONGRATULATIONS

From Gene Warren: The Ancient Aztecs were the first to cultivate and make chocolate. They called it “xocalatl,” meaning “bitter water.” Mayans and Aztecs used cocoa beans as currency. Chocolate comes from cacao trees, which beat fruit in the form of bright red or yellow pods, each containing 20-40 cocoa beans. Cocoa beans are fermented and roasted and ground into chocolate liquor, a non-alcoholic substance that is the basis of all chocolate products. It takes about 400 beans to produce a pound of chocolate liquor. The Swiss consume 22 pounds of chocolate per person each year, the most in the world. In the United States, consumption is 11 pounds per person. According to the National Confectioners Association, 52% of U.S. adults said chocolate is their favorite flavor. (Vanilla and berry flavors tie for second place at 12%.) The U.S. Census Bureau reports that there are nearly 1,000 locations in the United States that make chocolate and cocoa products. California and Pennsylvania are the two biggest processors. The American chocolate industry employs more than 40,000 people. The United States imports $418 million worth of chocolate a year from Canada alone, the leading foreign supplier.
